Newly appointed chef de cuisine Francesco Di Marzio introduces punchier flavours to the feminine and sophisticated cuisine at La Dame de Pic in Raffles Singapore. Di Marzio has worked with the three-michelinstarred chef Anne-sophie Pic on past projects and was handpicked by her to helm the kitchen. Some of his standout dishes include The Blue Lobster from Brittany, cooked over coals and served atop sushi rice with sencha leaves and yuzu, and served with a crustacean bisque with aromatic genmaicha and Madras curry. The seasonal Matsutake Mushroom was also executed well, cooked “en papillotte” in a Bourbon Pointu coffee sabayon with a light yet flavourful mushroom consommé infused with juniper and young ginger. This month, diners can also enjoy black truffle as they come into season.
