Iranian Royal Beluga Caviar

The beluga sturgeon is primarily farmed in the Caspian Sea and is known for producing the largest and softest roe. Due to scarcity – and efforts to make fishing sustainabl­e – you’ll always find a high price pegged to beluga caviar. These luminous grey orbs stand out for their plump texture. Each pearl is at least three millimetre­s in diameter. Smooth and with a slight buttery finish, it is best served on blinis and topped with creme fraiche.
