Iranian Royal Beluga Caviar
The beluga sturgeon is primarily farmed in the Caspian Sea and is known for producing the largest and softest roe. Due to scarcity – and efforts to make fishing sustainable – you’ll always find a high price pegged to beluga caviar. These luminous grey orbs stand out for their plump texture. Each pearl is at least three millimetres in diameter. Smooth and with a slight buttery finish, it is best served on blinis and topped with creme fraiche.
“Dubbed ‘black gold’, I chose Beluga Club’s caviar for The Atelier because it’s known for being the oldest delicacy in the world. For generations, nobility have enjoyed the pleasure of savouring these delicate pearls.
“Harvested from the protected waters of the Caspian Sea, The Beluga Club’s caviar offers aristocratic qualities and leaves a feeling of magnificence in the mouth. The superiority of the caviar boasts a silky texture, and the small yet plump grains burst with flavour and end with a fine finish.”
