Outlaw Rum: Islay Release

This drink is quite a mouthful, both literally and poetically. Aged in a peated whisky and ex-bourbon cask, the libation’s fiery and smoky flavours slowly fan out to release creamy caramel notes. And just before it gets a tad flat, a citrusy zest kicks in to further lift the profile.

“The founders of Outlaw Rum hoped to create a smooth sipping spirit of distinctio­n that could turn the world of whisky on its head. To achieve this, they first scoured the Caribbean region for spirit from the best producers. After an extensive search, they selected up to 10-year-old rum from the award-winning Angostura Distillery on Trinidad. The next step of their journey is where they upped the ante. The Outlaws aged the already smooth Angostura rum in former bourbon casks that once housed either very peated whisky from Islay or floral and fruity whisky from the Highlands. This process added a layer of complexity as each rum adopted the profile of the respective whisky casks, boldly catapultin­g Outlaw Rum into the realm of single malt whiskies.
