Bound­ary-push­ing cui­sine within his­tor­i­cal walls—that is the spe­cial­ity at Palace Restau­rant. It en­joys a priv­i­leged lo­ca­tion on the 10th floor of a build­ing orig­i­nally erected to mark the 1952 Olympics, and the restau­rant it­self has long been known as one that “led the way for gas­tron­omy in Fin­land”. Re­cently ren­o­vated, the reimag­ined restau­rant is an homage to its mid-cen­tury roots. Con­ceived by Note De­sign Stu­dio, the mod­ern, teak-clad in­te­ri­ors em­brace the Scan­di­na­vian sen­si­bil­ity of sim­plic­ity. The restau­rant’s pas­tel colour pal­ette makes a great first im­pres­sion, but it’s the food that sus­tains one’s in­ter­est. Con­tin­u­ing in its tra­di­tion as a restau­rant that raises the bar, chefs Hans Välimäki and Eero Vot­to­nen lead the kitchen with a pro­gres­sive ap­proach to the fine din­ing ex­pe­ri­ence.
