The gas­tro­nomic ex­pe­ri­ence at gas­tro wine bar Ma Cui­sine starts with your wine se­lec­tion


Ma Cui­sine shares its name with the orig­i­nal restau­rant in France’s Beaune re­gion in Bur­gundy, which is owned and run by chef and owner Mathieu Es­coffier’s fam­ily. But Es­coffier (pic­tured above right) and his business part­ner An­thony Charmetant (left) em­pha­sise that it is not a car­bon copy. “It’s a new con­cept based on its le­gacy (as a wine des­ti­na­tion),” they share, adding that “it’s less tra­di­tional—we want to make it a fun place to dis­cover and re­dis­cover wines in an en­gag­ing and un­pre­ten­tious place”.

The two met at a wine bar over a bot­tle of Clos de Vougeot, Do­maine Hude­lot-noel­lat 2013. With a shared pas­sion for food and wine, they ad­mit that it was only nat­u­ral for them to work to­gether. Es­coffier, who has worked at var­i­ous French es­tab­lish­ments such as Joël Robu­chon and Daniel Boulud, heads the kitchen, while Charmetant, who has worked at Paul Jaboulet Aîné, serves as the som­me­lier.
