As the age-old Chinese adage goes, we hope that each year will be filled with plenty (of fish). So what better way to celebrate the Lunar New Year than with a seafood feast? There is no better place to dive into a delicious meal of crabs, clams, abalone, and other luxurious ocean catches than at Long Beach Seafood Restaurant, which will remain open throughout the festive period. And if you are in the mood for some specialiti­es, we recommend making reunion plans at the Stevens Road outlet, which has debuted three exclusive dishes that will leave a lasting impression. Fish lovers must try the Li Shan claypot live marble goby. The marble goby is gently simmered in a hearty superior stock, which has been stewed for hours using chicken, fish bones, garlic, herbs, along with other secret ingredient­s to give it a rich umami. The savoury soup contrasts against the sweet flesh of the marble goby, and is a perfect representa­tion of the familial warmth of the season. No visit to Long Beach is complete without a feast of crab and other luxurious seafood. Known as the creator of the original and the best black pepper crab of Singapore, Long Beach has been establishe­d as the go-to restaurant for premium seafood, which is air-flown into Singapore live for absolute freshness. The Da Qian claypot live crab with ramen features top-grade Sri Lankan crab cooked in a special sauce prepared in-house—it is only available at Long Beach King and Long Beach @ Stevens—with leek, bell peppers, and a hint of spiciness. And we cannot forget the thick ramen, which is generously slathered in the flavourful sauce and has the distinct wok hei characteri­stic of well-cooked claypot dishes. To round off the richness of the aforementi­oned dishes, we recommend springing for the fresh lily bud with pearl beans, a vegetable dish that pairs the two nutritious ingredient­s for a healthy combinatio­n. Pearl beans are an excellent source of fibre, folate and potassium, while fresh lily buds boast generous amounts of calcium, iron and essential vitamins. The two ingredient­s are stir-fried with French beans, button mushrooms and bell peppers, before being topped off with crispy fried shrimp. After all, tossing in an abundance of nutritious ingredient­s can only bode well for the new year.
