A ca­sual diner along Telok Ayer Street, Meat Smith is known for its bustling, merry at­mos­phere. As its name sug­gests, you’ll get Amer­i­can-style bar­be­cue here, but with an up­mar­ket twist. Kick start your meal with a deca­dent bone mar­row pre­pared with gar­lic and sour­dough cream. Then add a side of baked na­chos topped with minced short rib and smoth­ered with slaw, melted cheese, bar­be­cue sauce and chipo­tle crema.

Top on its list of mains is a 500g but­tery Mishima wagyu rib­eye grilled to medium rare. This prized steak hails from a tiny is­land out­side of Hagi Yamaguchi Pre­fec­ture in Ja­pan where cat­tle re­mains strictly pure-bred. Other meat op­tions in­clude a South Amer­i­can es­cabeche-style grain-fed brisket with bread purée and chipo­tle sauce, as well as a smoky mus­tard-crust Amer­i­can Black An­gus dino beef rib.
