Crys­tal Jade Prestige is the chain’s con­tem­po­rary Chi­nese of­fer­ing, lo­cated in the posh Ma­rina Bay Fi­nan­cial Cen­tre. The dé­cor and lay­out re­flect this, as one first has to pass a glass wall of wines and cham­pagnes en-route to the taste­ful, sump­tu­ous mod­ern din­ing room.

Un­like its sis­ter restau­rants, Crys­tal Jade Prestige takes a fine din­ing ap­proach to its ser­vice, so many dishes are in­di­vid­u­ally plated and served, in­clud­ing the pop­u­lar starter of deep-fried scal­lops with salted egg yolk, chilled to­mato and av­o­cado dress­ing.

When you make your reser­va­tion, or­der the crack­ling suck­ling pig roll with black truf­fle pearl rice, which re­quires at least a day’s no­tice. This ex­quis­ite cre­ation is a roulade com­pris­ing the crisp-skinned, suc­cu­lent pork, cud­dling gleam­ing grains of earthy black rice. A del­i­cate lash­ing of truf­fle oil im­bues this dish with its heady per­fume.

At lunch, the sig­na­ture dim sum plat­ter of­fers a myr­iad se­lec­tion of the kitchen’s best: prawn and car­rot dumpling with black truf­fle, as­sorted mush­room dumplings, os­man­thus dumpling with scal­lop and cel­ery, and wa­ter chest­nut dumpling with olive and Chi­nese pars­ley. Each beau­ti­fully crafted morsel is as much a joy to eat as it is to be­hold.

Those look­ing to im­press busi­ness as­so­ci­ates or clients can turn to the list of sea trea­sures, which in­clude premium in­gre­di­ents such as whole fresh South African three-head abalone and Hokkaido sea cu­cum­ber, which are braised in oys­ter sauce.

The se­lec­tion of dessert throws up vari­a­tions of well-loved clas­sics. Chilled mango purée with pomelo and sago is topped with co­conut ice cream, while durian ice cream is deep-fried and served with mango purée. These are de­light­ful and de­li­cious ways to end a meal that is con­sis­tently ac­com­pa­nied by warm, pro­fes­sional ser­vice.
