is a senior lecturer at Temasek Polytechnic’s Culinary & Catering Management diploma programme where he teaches wines and spirits, food knowledge, gastronomy, and supports culinary and food service training. A former sommelier, Daniel was one of the pioneers in using local flavour descriptors to describe the sensory qualities of wine. He codeveloped the Asian Wine Lexicon to help new wine consumers in Asia to describe wines in their own context.
