is a se­nior lec­turer at Te­masek Polytech­nic’s Culi­nary & Cater­ing Man­age­ment diploma pro­gramme where he teaches wines and spir­its, food knowl­edge, gas­tron­omy, and sup­ports culi­nary and food ser­vice train­ing. A for­mer som­me­lier, Daniel was one of the pi­o­neers in us­ing lo­cal flavour de­scrip­tors to de­scribe the sen­sory qual­i­ties of wine. He code­vel­oped the Asian Wine Lex­i­con to help new wine con­sumers in Asia to de­scribe wines in their own con­text.
