The selection of premier beef here includes the American wagyu filet mignon from Snake River Farms, grass-fed Red Poll sirloin from Suffolk in the United Kingdom and, on occasion, extremely limited cuts of Hokkaido “snow” wagyu—all expertly grilled over hard wood and charcoal. But the menu also boasts equally satisfying starters, such as the classic bone marrow flan and Puck’s famously hearty side of cavatappi mac & cheese with white cheddar. The choices are straightforward and, much like its true-to-form attentive service that isn’t overly intrusive, these well-executed mainstays are enduring must-haves that set the standard.
