Crys­tal Jade Kitchen turns out sim­ple and hearty Cantonese dishes. Service is prompt and ef­fi­cient, even if the restau­rant is full. The cap­tains are gen­er­ally cheery and take ini­tia­tive in check­ing in to see if all the dishes have been served, as well as in of­fer­ing a change of plates. From the dim sum menu, the deep-fried salted egg shrimp with cheong fun wins points for cre­ativ­ity—juicy shrimp, deep-fried and slicked in umami-rich salted egg sauce, are wrapped in silky cheong fun for a lovely con­trast of flavours and tex­tures. The bite­sized egg tarts also im­press with light lay­ers of del­i­cate pas­try. For big­ger plates, the kung po chicken and the braised tofu with minced pork and shrimp are en­joy­able; the lat­ter sees soft tofu topped with a springy prawn and pork mix­ture, bathed in a flavour­ful black bean sauce. The restau­rant doesn’t stock wine, so your only pair­ing op­tion is Tiger Beer—or opt for its se­lec­tion of teas in­stead.
