Hai Tien Lo is one of Sin­ga­pore’s most in­no­va­tive, en­dur­ing Cantonese restau­rants. Cre­at­ing in­ter­est­ing riffs on clas­sic Cantonese dishes can be tricky (and risky), but it in­no­vates in a way that doesn’t alien­ate tra­di­tion­al­ists. For ex­am­ple, its sig­na­ture Trio of Trea­sure ap­pe­tiser fea­tures foie gras for a Western twist, but sat­is­fies tra­di­tional palates with pan-fried scal­lops and bar­be­cued duck. Din­ers look­ing for comfort food won’t be dis­ap­pointed with dishes such as dou­ble-boiled fish maw with bam­boo pith in fish bone broth and saltcruste­d stewed chicken with dried scal­lops in lo­tus leaf. The service is ex­cep­tional— staff are friendly, un­ob­tru­sive and chatty with­out be­ing over­bear­ing.
