The restau­rant’s sea­sonal-driven menu boasts a va­ri­ety of in­trigu­ing el­e­ments, from the ap­pe­tis­ers to the dessert. The lamb tartare is light and hides any gamey hints; its burst of flavour comes from the deep­fried ca­pers, pick­led onions, black olives and mus­tard ice cream. The hand-dived Ja­panese scal­lops from Hokkaido are fresh and suc­cu­lent, and sit atop a bed of lus­cious ar­ti­choke purée. The Trop­i­cal Fruits dessert has a de­cep­tively sim­ple name—it’s any­thing but. A mar­riage of sweet and savoury, the dish fea­tures an aro­matic laksa leaf ice cream that en­hances the ap­peal of trop­i­cal fruits in­clud­ing jack­fruit and sea co­conut.
