As one of the nine Sin­ga­pore restau­rants that made it onto the Asia’s 50 Best Restau­rants 2017 list, ex­pec­ta­tions are high for Burnt Ends. The pride and joy of this mod­ern Aus­tralian bar­be­cue joint is its gi­gan­tic four­tonne, dual-cav­ity oven and its mul­ti­ple grills, where mouth-wa­ter­ing meats are ex­e­cuted to per­fec­tion. In an­tic­i­pa­tion of a hearty meal, start with the re­fresh­ing Washington oys­ters, which are sweet, salty and full of umami good­ness. An­other must-try is the smoked quail egg and caviar, which has an in­ter­est­ingly chewy tex­ture on the out­side, while the in­side is burst­ing with in­cred­i­ble flavours. The mayura cube roll, served medium-rare, is juicy and dressed sim­ply with a side of greens.
