Perched atop the Ma­rina Bay Sands Ho­tel, Cé La Vi boasts panoramic views of the bay. The kitchen is helmed by ex­ec­u­tive chef Joey Ser­gen­takis, who serves up mod­ern Asian cuisine that’s com­plex, vis­ually ap­peal­ing and de­li­cious. Start with the Hokkaido scal­lops and oys­ter ce­viche; the ap­pe­tis­ers wake up the taste buds with a burst of tangi­ness from the cala­mansi, lemon­grass oil and pomelo. Ex­clu­sively sourced by the restau­rant is the Rangers Val­ley Black Mar­ket rib-eye, which is grilled to ten­der, smoky per­fec­tion be­fore it’s plated with sweet potato noodles and kim­chi for an Asian twist. This dish goes well with a full-bod­ied red wine; din­ers can choose from a wide range of wines avail­able by the bot­tle and by the glass, span­ning dif­fer­ent re­gions. There’s al­ways a som­me­lier on hand in case you need help with the pair­ings, too. The over­all service is also top-notch.
