The se­lec­tion of premier beef here in­cludes the Amer­i­can wagyu filet mignon from Snake River Farms, grass-fed Red Poll sir­loin from Suf­folk in the United King­dom and, on oc­ca­sion, ex­tremely lim­ited cuts of Hokkaido “snow” wagyu—all ex­pertly grilled over hard wood and char­coal. But the menu also boasts equally sat­is­fy­ing starters, such as the clas­sic bone mar­row flan and Puck’s fa­mously hearty side of ca­vat­appi mac & cheese with white ched­dar. The choices are straight­for­ward and, much like its true-to-form at­ten­tive service that isn’t overly in­tru­sive, these well-ex­e­cuted main­stays are en­dur­ing must-haves that set the stan­dard.
