There are few restaurants in Singapore that do Spanish fare quite like Dehesa. If you’re new to nose-to-tail cuisine, a great place to start is the crispy pig’s head. Unlike its slightly intimidating-sounding name, the dish is plated beautifully and is incredibly tasty— and good news for the squeamish: no pig head in sight. If you love tulang, don’t miss the grilled bone marrow, which comes in four large generous bones and is served with a side of salad. For mains, the beef tartare is a surprisingly refreshing pick and is less pungently seasoned. For stronger flavours for dessert, try the chocolate with olive oil and salt, which is rich with a bittersweet tinge.
