Chef Jean-ge­orges Von­gerichten Sin­ga­pore out­post of­fers a Mod­ern Euro­pean menu that show­cases his world of in­flu­ences. The bur­rata, poached fig vinai­grette and arugula is a stand­out, so is the crispy basil salt-and­pep­per cala­mari with cit­rus dip­ping sauce. The wood oven-roasted Maine lob­ster is in­trigu­ingly flavoured with oregano and chilli. The meat is ten­der and juicy, and the serv­ing big enough to share. The sir­loin, on the other hand, is mar­i­nated in miso and served with co­rian­der pesto and sesame—an in­ter­est­ing com­bi­na­tion that pairs well with the beef.
