Opened in 1982, a steady stream of diners continues to be drawn to Hua Ting’s broad repertoire of classic and modern Cantonese dishes, which it prepares with time-honoured finesse. Its elegant setting was refurbished in December—a modern uplift that also marks the restaurant’s 35th anniversary. Among its most popular dishes is the crispy roasted duck, which has much of the fat rendered off to yield crispy, caramelised skin and juicy, tender meat. Seasonal dishes bring out the best of the fresh produce available, prepared in myriad cooking styles by an experienced culinary team helmed by master chef Chung Lap Fai. Service is cordial and attentive, with the assigned waitstaff adept at recommending dishes to suit almost every palate and dietary preference. As with most Chinese restaurants of its calibre, however, the bill scales steeply upwards after the inclusion of seafood dishes, based on the seasonal rates.
