Min Jiang dishes up one of the best ren­di­tions of Pek­ing duck in Sin­ga­pore. Roasted to per­fec­tion in a cus­tom-made wood-fired oven, the restau­rant’s most pop­u­lar dish starts off with a pe­tite plate of the crispi­est duck skin. The menu also boasts an ex­cel­lent se­lec­tion of soups; the dou­ble-boiled wild chicken con­sommé with won­ton and Tientsin cab­bage is a com­fort­ing, flavour­ful broth that’ll leave you crav­ing more. There are nu­mer­ous fish and seafood op­tions, in­clud­ing lob­ster and crab— but if you have to choose, pick some­thing from the abalone menu. Sim­ply done and ex­e­cuted with aplomb, the abalone is per­fectly plump and hugely sat­is­fy­ing.
