Red House Seafood is syn­ony­mous with dishes that cel­e­brate the bounty of the ocean. Mush­room truf­fle dumplings have an im­pos­si­bly thin skin that seems to dis­ap­pear when it en­ters your mouth, the fill­ing ten­der and soft with a truf­fle essence that’s strong and long-last­ing, but not over­pow­er­ing. Malacca prawns are bathed in a pleas­ing spicy sauce, one with hints of chilli, zesty lemon rind, lemon­grass and the bunga kan­tan flower used in ro­jak—it’s a heady con­coc­tion that works. Prawns in creamy cus­tard sauce are ex­pertly cooked; they’re en­joy­ably sweet and salty.
