The grilled as­para­gus—cooked with a unique method in a Josper char­coal grill—en­sures that the nat­u­ral juices are re­tained. This crowd pleaser is served with thin slices of Ser­rano ham, egg with hints of pa­prika and sherry vinai­grette. Gam­bas al pil-pil are prawns served on a siz­zling plat­ter, en­hanced by a sauce of olive oil, gar­lic and hot pep­pers. The paella op­tions in­clude seafood, meat, mixed and veg­e­tar­ian va­ri­eties; the seafood ver­sion has chewy squid, sea bass, mus­sels, del­i­cate clams and shrimp ac­com­pa­ny­ing the aro­matic saf­fron rice, cooked and served in a round, shal­low pan.
