Fresh oys­ters served with lemon and mignonette are al­ways a great way to start a meal. The Ta­jima wagyu flat-iron steak here is slightly gamey, so if you’re not into that, opt for the dukkah-crusted Aus­tralian lamb cut­let—braised shoul­der with spiced egg­plant, lab­neh and sumac. This cut is brim­ming with spices that put a unique twist on the tra­di­tional rack of lamb. End things with the liquorice par­fait (al­beit an ac­quired taste), which is well-bal­anced, as is the chabi­chou, a firm and creamy un­pas­teurised cheese made from goat’s milk.
