On of­fer is mod­ern Cal­i­for­nian cuisine with global ac­cents, which of­ten changes based on the sea­son. The big-eye tuna tartare is al­ways a stand­out; the finely diced fish is mixed with chilli aioli, scal­lions, pick­led ginger and bonito flakes, and served in crisp cones. The pasta se­lec­tion is of­ten up­dated, too, but when you see the white Alba truf­fle tagliatell­e, don’t hes­i­tate to order it. It’s a small por­tion, but the al dente pasta is redo­lent in a creamy, deca­dent white sauce that turns out to be very fill­ing. Don’t worry, you’ll still have space for the crispy-scale sea bass; the meat is cooked to ten­der per­fec­tion, with the scales adding the de­sired level of crispi­ness.
