Syun is chef Hal Yamashita’s first restaurant outside Japan. While some dishes appear more traditional than others, the dinner tasting menus showcase the chef’s more unusual creations. The menu reads like a selection of greatest hits, and the freshness of ingredients is paramount here. One dish you shouldn’t miss is his sea urchin rolled with Ohmi beef and topped with smoked caviar, which appears on both the tasting and à la carte menus. Though it’s a stretch to call the food “fusion”—the addition of parmesan to grilled cod or truffle salt to edamame is hardly a revelation—for the most part, it works.
