Syun is chef Hal Ya­mashita’s first restau­rant out­side Ja­pan. While some dishes ap­pear more tra­di­tional than oth­ers, the din­ner tast­ing menus show­case the chef’s more un­usual cre­ations. The menu reads like a se­lec­tion of great­est hits, and the fresh­ness of in­gre­di­ents is para­mount here. One dish you shouldn’t miss is his sea urchin rolled with Ohmi beef and topped with smoked caviar, which ap­pears on both the tast­ing and à la carte menus. Though it’s a stretch to call the food “fu­sion”—the ad­di­tion of parme­san to grilled cod or truf­fle salt to edamame is hardly a rev­e­la­tion—for the most part, it works.
