The restau­rant’s fo­cus on fresh pro­duce is height­ened by the im­pres­sive floor-to-ceil­ing dis­plays—as seen in the tem­per­a­ture-con­trolled seafood room, which is home to a wide se­lec­tion of fresh seafood, seafood an­tipasti and mar­i­nated fish. A steam­ing bowl of the hearty seafood laksa broth, filled with your choice of noo­dles, veg­eta­bles and seafood trea­sures, is a must-have. But the high­light here is the char­coal grilled-to-order cuts of meat such as the tom­a­hawk steak and seafood. The catch of the day—a choice of Mediter­ranean sea bass or golden pom­fret, on our visit—fea­tures ul­tra-moist fish with in­cred­i­ble flavour and fresh­ness. Out-of-town friends can get ac­quainted with au­then­tic lo­cal dishes such as the Hainanese chicken rice, black pep­per crab and Sin­ga­porean char kway teow. Leave space for dessert with the as­sort­ment of nonya kuehs and Western cakes and tarts—but if you only have room for one, the tiramisu of­fers a strong cof­fee kick.
