Set on the ver­dant grounds of the

Sin­ga­pore Botanic Gar­dens, this mul­ti­awarded restau­rant is worth the jour­ney. Chef Jason Tan prof­fers a con­tem­po­rary style of cook­ing he calls “gas­tro-botan­ica”, which en­tails sourc­ing the best pro­duce that he then trans­forms in in­ge­nious ways. His tech­ni­cal ex­e­cu­tion show­cases his French train­ing and his plates dis­play an affin­ity for un­usual flavour com­bi­na­tions, as seen in dishes such as the New Zealand blue cod “crispy scales” with chicken wing, maitake, black truf­fle and hari­cot coco Paim­pol. Set menus reign here, but luck­ily the pro­gres­sion is mea­sured, with each dish packed with flavour yet not overly heavy. Lo­cal in­flu­ences also make an ap­pear­ance, as in chef Tan’s sig­na­ture dessert My Favourite Child­hood Food Mem­ory, fea­tur­ing peanut but­ter, pan­dan kaya and toasted bread. All in all, it’s a must-visit and dare­say of­fers one of the best-value tast­ing cour­ses in Sin­ga­pore.
