The high­lights on the chef’s menu in­clude the scal­lops with Viet­namese dress­ing, buried un­der re­fresh­ing co­rian­der granita and the­atri­cally served on a half-shell. There is also the ten­der, lus­cious squid noo­dle dish served in a pip­ing-hot mush­room dashi soup stock with a raw egg yolk, a dol­lop of cream and chicken wing—the essence of de­li­cious com­fort cui­sine. The foie gras brûlée is also out­stand­ing; the rich liver pairs very well with the sweet and fruity bits of ly­chee, gin­ger and crunchy gin­ger­bread crum­ble. An­other bold, hearty and play­ful main is the at­trac­tively plated Sil­ver Hill Farm duck, served with a par­fait, toast and cab­bage.
