There are few restau­rants in Sin­ga­pore that do Span­ish fare quite like Dehesa. If you’re new to nose-to-tail cui­sine, a great place to start is the crispy pig’s head. Un­like its slightly in­tim­i­dat­ing-sound­ing name, the dish is plated beau­ti­fully and is in­cred­i­bly tasty— and good news for the squea­mish: no pig head in sight. If you love tu­lang, don’t miss the grilled bone mar­row, which comes in four large gen­er­ous bones and is served with a side of salad. For mains, the beef tartare is a sur­pris­ingly re­fresh­ing pick and is less pun­gently sea­soned. For stronger flavours for dessert, try the choco­late with olive oil and salt, which is rich with a bit­ter­sweet tinge.
