Opened in 1982, a steady stream of din­ers con­tin­ues to be drawn to Hua Ting’s broad reper­toire of clas­sic and mod­ern Can­tonese dishes, which it pre­pares with time-hon­oured fi­nesse. Its el­e­gant set­ting was re­fur­bished in De­cem­ber—a mod­ern up­lift that also marks the restau­rant’s 35th an­niver­sary. Among its most pop­u­lar dishes is the crispy roasted duck, which has much of the fat ren­dered off to yield crispy, caramelise­d skin and juicy, ten­der meat. Sea­sonal dishes bring out the best of the fresh pro­duce avail­able, pre­pared in myr­iad cook­ing styles by an ex­pe­ri­enced culi­nary team helmed by mas­ter chef Chung Lap Fai. Ser­vice is cor­dial and at­ten­tive, with the as­signed wait­staff adept at rec­om­mend­ing dishes to suit al­most ev­ery palate and di­etary pref­er­ence. As with most Chi­nese restau­rants of its cal­i­bre, how­ever, the bill scales steeply up­wards af­ter the in­clu­sion of seafood dishes, based on the sea­sonal rates.
