The cre­ative en­ergy be­hind the restau­rant’s menu is chef Yo­hhei Sasaki, known for his Ja­panese flair. His stuffed cala­mari is suc­cu­lent, while the spaghetti ai ricci di mare—up­lifted by Hokkaido sea urchin—is a unique blend of flavours. The crown­ing glory of the menu is the Toriyama wagyu A4 and the short ribs. The flavour­ing is ex­quis­ite and the meat beau­ti­fully ten­der. The tiramisu is good, but eclipsed by the la sfera, a de­lec­ta­ble con­coc­tion of yuzu, ri­cotta cheese, lemon sor­bet and aca­cia honey gel. It’s not overly sweet or tart, just how we like it.
