Jade mea­sures up to the dis­tin­guished air of its name­sake. Pre­mium in­gre­di­ents are sourced from all over the world and there are var­i­ous set menus at dif­fer­ent price points, in­clud­ing Taste of Nos­tal­gia and Jade Del­i­ca­cies, as well as two veg­e­tar­ian op­tions. From the sig­na­ture roasted pork belly to the prawn with wasabi mayonnaise and air-flown Ja­panese wagyu in a pi­quant black pep­per sauce, the culi­nary team’s deft skills are ev­i­dent in the well­bal­anced flavours, spot-on cook­ing time and at­ten­tion to de­tail. The seafood broth isn’t just a whole­some dou­ble-boiled con­coc­tion that re­tains the essences of its su­pe­rior in­gre­di­ents, it also im­presses with silken tofu cut very finely to re­sem­ble sea anemone. Wine lovers will ap­pre­ci­ate the big­ger-than-most se­lec­tion of cham­pagnes, reds and whites, which rep­re­sents ma­jor wine-grow­ing re­gions and is avail­able by the glass. There’s also a se­lec­tion of Chi­nese wine, in­clud­ing the famed Kwe­i­chow Moutai that un­der­goes eight fer­men­ta­tions and nine dis­til­la­tions in a year-long brew­ing process.
