With light shav­ings of black truf­fle and cov­ered in mas­car­pone cheese, the fluffy airi­ness of the bread is sim­ply ad­dic­tive. The Westholme wagyu striploin (BMS 3-5) is best served medium-rare, with a sprin­kling of sea salt to bring out the full meaty flavours.
