The tuna tartare with av­o­cado, trout roe and ex­tra-vir­gin olive oil is a light and re­fresh­ing start to a meal at Opus. For the main course, the whop­ping 800g Rangers Val­ley An­gus (dryaged) is por­tioned for two; it’s lightly charred and served with two sauces and three kinds of salt. An­other great choice for the main course is the 300g Der­aza Iberico pork rack, which is smok­ily grilled, ten­der and flavour­ful.
