The tuna tartare with avocado, trout roe and extra-virgin olive oil is a light and refreshing start to a meal at Opus. For the main course, the whopping 800g Rangers Valley Angus (dryaged) is portioned for two; it’s lightly charred and served with two sauces and three kinds of salt. Another great choice for the main course is the 300g Deraza Iberico pork rack, which is smokily grilled, tender and flavourful. If you like seafood, the sustainable Msc-certified Glacier 51 toothfish fillet with charred leek, broccolini and brown-butter dashi has a memorable contrast of textures and flavours.
