For an ap­petis­ing starter, the fried crispy egg­plant is pre­sented in meaty strips, sprin­kled gen­er­ously with small pieces of light fluffy pork floss. An in­di­vid­ual bowl of dou­ble-boiled shark bone car­ti­lage soup also con­tains soft golden fish maw and fra­grant bam­boo pith. One spe­cial­ity is the steamed mian xian (thin white ver­mi­celli noo­dles) with sweet baby lob­ster in its bright pink shell, served in a light, sweet broth and en­hanced by a dash of aro­matic hua diao wine. For a re­fresh­ing dessert, the chilled squares of jelly royale, served in a co­conut, are sweet and cool­ing, with juli­enne of co­conut pro­vid­ing a crunchy tex­tu­ral con­trast. The ex­ten­sive wine list in­cludes a red and white house pour by the glass. Hos­pitable ser­vice is pro­vided at this 240-seat spa­cious restau­rant in Sin­ga­pore’s north­ern area, over­look­ing the green open spa­ces at Orchid Coun­try Club.
