Sum­mer Pavil­ion is known for its seafood dishes; the baked sea perch in hoisin sauce is firm yet ten­der, and the sauce is ex­pertly bal­anced so as not to over­power the fish. If nat­u­ral flavours are pre­ferred, you can’t go wrong with the Dong Xing grouper; steamed with gar­lic and tofu skin, it high­lights the fresh­ness and su­perb qual­ity of the fish. Lux­ury and com­fort meet in the poached rice and lob­ster meat dish, where rich stock per­me­ated with scrump­tious seafood flavours is drenched over chunks of fresh lob­ster meat atop poached rice.
