There are many rea­sons why this sushi-ya stands out from other restau­rants, one in par­tic­u­lar is its aged soy sauce. It’s heav­ier than we re­mem­bered, which makes din­ers ap­pre­ci­ate the nu­ances of the omakase menu. Sea­sonal fish, and what we sus­pect is a pen­chant for shell­fish aside, an ap­pe­tiser of del­i­cate snap­per milk (tai shi­rako) in a chawan­mushi, is de­li­cious. It’s fol­lowed by a serv­ing of Iwashi sar­dine, mar­i­nated in a lit­tle salt and vine­gar for four days, re­sult­ing in a ten­der bite. Other stand­outs in­clude bonito mar­i­nated with soy, gin­ger and spring onions; and, more no­tably, the rare shi­mo­furi—an in­tri­cately mar­bled cut of tuna—served two ways.
