Chef Ho Tien Tsai’s sig­na­ture dishes such as the Tai­wan-in­spired braised pork trotter noo­dles (a recipe in place for 26 years) con­tinue to lure loyal din­ers back for his ex­em­plary cook­ing and su­perb roasted meats. For the unini­ti­ated, the break­down of dishes is about 70 per cent Can­tonese, 20 per cent Sichuanese and 10 per cent Tai­wanese, which al­low for a di­verse flavour pro­file. Ser­vice, while lack­ing fi­nesse, is friendly and prompt, in­stantly putting din­ers at ease if you’re not look­ing to im­press. Wines by the glass are prac­ti­cally non-ex­is­tent and the unin­spir­ing wine list stocks the usual en­trylevel sus­pects.
