The cui­sine—cre­ated by the group’s se­nior ex­ec­u­tive chef, Ken Ling, and ex­e­cuted by res­i­dent ex­ec­u­tive chef, Nick Ng—is a cre­ative take on fine din­ing, with an em­pha­sis on pre­mium in­gre­di­ents such as Saga beef and geo­duck clam sashimi. The smart wine list, has a good representa­tion of rea­son­ably priced blue-chip la­bels and in­ter­est­ing vi­gneron wines to please all bud­gets and palates. Seem­ingly tele­pathic ser­vice en­sures that the staff know what you need be­fore you’ve even re­alised it, from a new set of warm tow­els in the mid­dle of the meal to a re­freshed cup of hot tea.
