The chef uses lo­cally sourced in­gre­di­ents mixed with the best sea­sonal pro­duce, and the fresh­ness shines through in the dishes. The crudo of meka­jiki toro (sword­fish belly) and the wagyu beef carpac­cio make great starters as their tart­ness and de­lec­ta­ble light­ness awaken the palate. The rec­om­mended An­gus grain-fed prime rib (served with a pink­ish blush) and the farmed duck con­fit with crisp skin and suc­cu­lent meat show­case the chef’s ex­per­tise with the grill and the pan, re­spec­tively. The mango tian is a de­light­ful cup of dessert; the chia seed white choco­late yo­ghurt con­trasts re­fresh­ingly well with the mango gelée and fresh fruits.
