Chef Martin Foo has done ad­mirably to present a con­tem­po­rary take on fine Chi­nese din­ing with in­ven­tive ideas that hit the right note. The Dim Sum Sym­phony is a pal­ette of four dif­fer­ent kinds of dim sum, mod­ernised and el­e­vated with spe­cial in­gre­di­ents—think lob­ster in har gow, truf­fle on top of siu mai and squid ink in dumpling skin, all of which work quite won­der­fully. The Pek­ing duck wins ma­jor points for ex­pand­ing the taste reper­toire of the clas­sic dish, with in­clu­sions such as av­o­cado, foie gras and home­made se­same hoisin sauce; the meat is then diced and stuffed into mini crispy cones that you eat with your hands.
