The crispy egg with sevruga, cod and sea urchin cus­tard is a must-have starter; it’s the per­fect size and not overly rich. The fet­tuc­cine with span­ner crab, prosecco and fen­nel pollen has lovely rus­tic, homey flavours, while the tagli­olini with scampi, tar­ragon and smoked pa­prika strad­dles the line be­tween fine din­ing and home cook­ing, and is some­how able to com­bine the two. Save room for the piña co­lada cake with mango cream and pis­ta­chio gelato—the per­fect sweet way to end a meal.
