The chilli pomelo crab de­serves all the praise it has been gar­ner­ing since its in­tro­duc­tion in 2013. There’s much to love about it, from the beau­ti­fully cooked Sri Lankan crab to its flavour­ful gravy, which boasts a bal­anced con­trast of sweet and savoury flavours and just the right amount of heat, piqued by the clever ad­di­tion of pomelo sacs for added tang. A sim­i­lar show of skilled re­straint can be found in the wok-fried Kagoshima wagyu beef and its punchy pep­per­corn sauce, which isn’t over­pow­er­ing, al­low­ing the ten­der and nat­u­rally flavour­ful prized beef to shine. If the weather per­mits, an al fresco ta­ble is rec­om­mended.
