This restau­rant is bathed in pale green hues that are off­set by sculp­tures, lanterns and del­i­cately colour­ful art­work, pro­vid­ing a serene am­bi­ence in the heart of the cen­tral busi­ness district. En­joy the crispy roasted pork belly for its com­bi­na­tion of del­i­cate meat, layer of fat and golden crack­ling. The dou­ble­boiled dried seafood in su­pe­rior broth, laden with col­la­gen, con­tains del­i­ca­cies of sliced abalone, sea cu­cum­ber and fish maw in a sat­is­fy­ing and com­fort­ing bowl of good­ness. In an­other sig­na­ture dish, twirls of chewy, ten­der sim­mered egg noo­dles meet suc­cu­lent Bos­ton lob­ster, its fine sweet flesh ac­cen­tu­ated by rich, spicy XO chilli sauce. Jade’s al­mond ice dessert is a trea­sure trove of jade-green wheat­grass jelly, gingko nuts, lo­tus seeds, lily buds, white fun­gus, dried lon­gans and al­mond cream, mak­ing for a de­light­fully mem­o­rable fi­nale. Chi­nese wines are in­cluded on the ad­e­quate wine list.
