It cer­tainly has stood the test of time and there are many good rea­sons for it. The menu is ex­ten­sive yet cu­rated. Even at its most in­ven­tive mo­ments, as with its monthly spe­cials, it never strays away from its stolid Can­tonese her­itage. Dim sum is a trusty way to go if you’re lunch­ing; the fresh­ness of in­gre­di­ents can be en­joyed right away. The rudi­men­tary items are finely served, and the more “mod­ern” dishes strike the right bal­ance of tex­ture and savouri­ness. The Pek­ing duck is suc­cu­lent and won­der­fully sea­soned right to the bone, while the skin re­mains du­ti­fully crisp. Soups, faith­ful to Can­tonese pri­or­ity, are elab­o­rate and nour­ish­ing, con­sist­ing of nu­mer­ous pre­mium in­gre­di­ents that are packed with flavour—nary a sea­son­ing need ap­ply. Try the savoury bird’s nest with fresh crab roe and the dou­ble-boiled soup in mini pump­kin as a case in point. The fish noo­dles in su­pe­rior stock is well worth the calo­ries—ex­pertly stir-fried to per­fec­tion.
