Good­wood Park Ho­tel, 22 Scotts Road, S(228221) TEL: 6730 1704 The in­te­ri­ors show signs of fray­ing, but the food, for the most part, is con­sis­tently ex­e­cuted well. It’s ev­i­dent in the cam­phor tea-smoked duck, which boasts a browned and crisp skin that com­ple­ments the smoky and suc­cu­lent meat; the re­li­able staff even of­fer to wrap them in pan­cakes for guests. The Min Jiang deluxe plat­ter shows the chef’s cre­ative side, with of­fer­ings such as the chunky lob­ster medal­lion coated with salted egg yolk atop com­pressed wa­ter­melon, and the prawn mousse scal­lop stuffed with green gin­ger sauce. Min Jiang does de­li­cious soups, too, es­pe­cially the dou­ble­boiled Song fish-head in a bub­bling su­pe­rior stock broth that’s milky and flavour­some— per­fect on a rainy day.
