TEL: 6831 6262/66 Helmed by chef Chen Kentaro, Shisen Haten is lo­cated on the 35th floor of the Man­darin Or­chard Sin­ga­pore. He’s fa­mous for Sichuan fare, which in­cludes a stun­ning ap­pe­tiser of foie gras chawan­mushi with crab roe. This in­dul­gent dish is made up of a rich blend of foie gras, smooth egg cus­tard, crab roe and shred­ded crab that’s lovely with ev­ery mouth­ful. Not to be missed is the dish of chicken with chilli pep­pers—the savoury meat is first deep-fried to per­fec­tion and sea­soned with a bal­anced but spicy kick. The stewed fish fil­let with pick­led veg­eta­bles is an­other dish to try. Served in a hot stone pot, the broth is re­fresh­ing, with sub­tle hints of spice and pick­led veg­eta­bles adding a re­fresh­ing tang. For meat lovers, the Sichuan-style stir-fried kurobuta pork with gar­lic leaf is a win­ner. Con­clude the meal with the Shin­sen Haten Co­conut Fan­tasy, fea­tur­ing a gen­er­ous por­tion of bird’s nest and al­mond pudding served in a young co­conut. The creamy, smooth tex­ture of the al­mond pudding matches well with the nat­u­ral sweet­ness of the young co­conut.
