TEL: 6884 8239 As we head into the cooler sea­sons of Ja­pan, high­lights such as black-throat sea perch— served lightly torched to ac­cen­tu­ate the fish’s beau­ti­fully fatty flavours—are too good to rush through. It’s en­joyed along with some tuna, lightly mar­i­nated in soy and yuzu, and am­ber­jack. Seared fatty tuna and some cooked amadai were savoured as part of the cooked dishes in­cluded on the tast­ing menu, but the breath­tak­ing fresh­ness of ba­fun uni from eastern Hokkaido and the ikura that just came into sea­son can­not be over­stated. True fans dine here for the pris­tine sushi—and its per­fect bal­ance of sea­soned rice that com­ple­ments the flavours of the fish it car­ries nicely.
