It’s enjoyed along with some tuna, lightly marinated in soy and yuzu, and amberjack. Seared fatty tuna and some cooked amadai were savoured as part of the cooked dishes included on the tasting menu, but the breathtaking freshness of bafun uni from eastern Hokkaido and the ikura that just came into season cannot be overstated. True fans dine here for the pristine sushi—and its perfect balance of seasoned rice that complements the flavours of the fish it carries nicely.
