The amuse-bouche is a tiny Mar­mite bite that lets you savour its flavour in an un­threat­en­ing way. The high­light among the starters is the smoked Loch Fyne sal­mon, whose del­i­cate flavour is well-paired with crème fraiche. All three of the main cour­ses (sal­mon, chicken and beef) are per­fectly cooked, if not par­tic­u­larly spec­tac­u­lar. The beef is the best of the three, high­light­ing the dis­tinct flavour of the Ta­jima wagyu that the restau­rant has spe­cially reared in Aus­tralia’s re­gion of north­ern Victoria. By far the best, how­ever, is the dessert art course that’s plated right at the ta­ble. Blue corn­flower sauce with del­i­cate flo­ral notes is laid down to form a base for the Val­rhona crémeux with crispy feuil­letine lay­ers, whipped hazel­nut but­ter, bit­ter­sweet hon­ey­comb, caramelise­d buck­wheat, roasted corn and salty fin­gers (a salty suc­cu­lent some­times called “beach ba­nanas”). The wine pair­ings are also ex­cel­lent, thanks in part to the ex­tremely ex­ten­sive wine list.
