05-02 National Gallery Singapore, 1 St. Andrew’s Road S(178957) TEL: 6384 5585 Yàn invites diners to relax and tuck into executive chef Lai Chi-sum’s traditional Cantonese fare, which isn’t complete without an order of the Peking duck. In a whole or half portion, it’s presented with a crisp skin and moist meat you can wrap up with housemade crêpes. The steamed kampong chicken is perfect with white rice. The chef uses freerange chicken that’s rich in umami, elevated with a simple but addictive ginger and scallion sauce. Go easy on the rice, though, especially if you’re ordering the Penang-style fried kway teow with sweet, aromatic Chinese sausage and chilli. There’s a well-curated wine list, offering bottles from various regions.
